Ingredients
  

  • 3 Tbsp Olive oil
  • 4 Large Carrots thin round slices
  • 2 Celery Stalks chopped
  • 1 Med Onion chopped
  • 64 Oz Chicken Broth Low sodium
  • 4 Cups Water
  • 1 TB Salt
  • ½ tsp Black pepper
  • Bunch Chopped Italian parsley
  • 12 Oz Egg Noodles Extra Broad or Wide
  • 1 Store bought Rotisserie Chicken – already cooked Skin peeled and shredded to pieces

Instructions
 

  • In a large pot, add olive oil then sauté diced onions, carrots, and celery until softened.
  • Toss in your already cooked shredded chicken into the pot. Stir well to incorporate.
  • Add chicken broth and 4 cups of water to the pot. Bring the mixture to a boil.
  • Season the soup with salt and pepper to taste. Adjust based on your preference.
  • Add the egg noodles to the boiling pot and cook according to the package instructions.
  • Once the noodles are cooked, sprinkle the freshly chopped parsley and once again taste and adjust seasoning if needed.
