Italian Macarons

Yes, I did it, I finally figured out the secret to the most scrumptious, hollowless, macarons!!! You know the saying right? Once you go Italian you never go back! Okay maybe I just made that up. But there’s no way I’m going back to French macarons. This recipe is fool proof and perfect for any beginner or experienced baker! This Italian baking technique will turn you into a macaron masterclass!

Ingredients:

1 ½ cups super fine almond flour – blanched

1 ¼ cup powdered sugar

55 g egg whites (about 2 small eggs)

Food coloring gel

55 g egg whites (about 2 small eggs)

¾ cup sugar

2 ½ tablespoon water

Pinch of salt

Preheat oven to 300 F

  1. In a Food Processor Grind together flour and powdered sugar
  2. Sift through a sieve into large bowl
  3. In a small bowl place 55g egg white and a pinch of the food coloring.  Beat together until well combined.  Pour over the food processed almonds.
  4. Place the other 55 g egg whites and dash of salt in a mixing bowl
  5. In a small saucepan combine sugar with water and place on medium heat. 
  6. Using a candy thermometer when it reaches 230F start whipping egg whites on medium high speed.
  7. When it reaches 244F POUR IT OVER THE WHIPPED EGG WHITES
  8. Continue beating until the bowl has glossy stiff peaks and your whisk has a beak like appearance.
  9. Add the whipped whites over almond mixture and gently fold until it flows in very thick ribbons.
  10. Pipe onto baking sheet in 1-inch circles.
  11. Tap baking sheet once on counter top to remove air bubbles.
  12. Bake for 20 minutes.
  13. Allow to cool for about 5 minutes before removing.
  14. Fill with your favorite filling!
