Lebanese No Bake Chocolate Biscuit Cake With only 5 ingredients!

The guests are coming over and you don’t have time to run to the store! Here’s an easy no bake Chocolate Cookie Cake! It’s also called a Lazy Cake and I can see why! It is a mildly sweet yet chocolaty addictive. I like having it with my coffee or after dinner dessert! My Lebanese mom would make this cake when we were kids. I remember thinking how fancy and complicated it looked! Who knew that the opposite was true! And guess what! You only need 5 ingredients!

  • 1 cup white sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 cup warm water
  • 2/3 cup salted butter
  • 15 ounces biscuit cookies broken into pieces
  1. In a medium sauce pan mix the white sugar, unsweetened cocoa powder and warm water on the stove over low.
  2. Increase the heat to medium and gradually add in the butter until it completely melts in with the chocolate.
  3. In a separate large bowl, add the broken cookies. Then add the melted chocolate over the crackers and mix until combined.
  4. Prepare a long piece of plastic wrap (about 2 feet) and pour the chocolate cookies in a way to create a log. Gently wrap and squeeze the plastic wrap around until it fits like an log. Place it in the freezer for at least a hour before slicing up and serving!
